tried a new recipe...LOVED IT!
No one in our house likes the Banana Cream in the variety pack of Instant Oatmeal, so I just keep moving the packets from one box to the next. Well I finally had enough to fill up a box all by themselves and I couldn't bring myself to thow them away, so I googled a recipe for muffins with instant oatmeal...and tada...I found one of course.

Banana Instant Oatmeal Muffins
1 cup whole wheat flour (or whatever)
1/4 cup light brown sugar
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
2 packets of instant oatmeal (or 1 cup instant oats)
2 eggs
2 Tbsp canola oil
1 cup mashed banana (3 medium)
1/2 cup fat-free buttermilk (make by adding Tbsp vinegar to milk)
Preheat oven to 375 and prepare a 12 cup muffin pan with paper liners or spray coating. Whisk the flour, sugar, baking soda, baking powder, spices and oats into a large bowl. In another bowl beat the eggs, oil, mashed bananas and buttermilk. Quickly fold this mixture into the dry ingredients, mixing until just combined. Divide the mixture between the muffin cups and bake for 15-20 minutes until a toothpick inserted comes out clean. Cool for 5 minutes in the pan, then turn out onto a wire rack and cool completely
*I also added a handful of chocolate chips to the batter. Yummy!
Loved seeing all of the fun pics. I may have to try the recipe... we have the same problem.
